Plum Barbecue Back Rib Recipe

The barbecue back rib recipe is designed for indirect cooking in a smoker so you’ll need to reserve a good 6 hours for preparation. If you haven’t got 6 hours the bookmark this page for another day and take a look at my other barbecue rib recipes .

If you have got 6 hours, go for it! You won’t be disappointed.

The first stage is to cook indirectly with a rub and this rub will be enough for 900g / 2 lbs of back ribs.

Ingredients:-

  • 50g / 2oz brown sugar
  • 50g / 2oz granulated sugar
  • 3 tablespoons garlic salt
  • 3 tablespoons celery salt
  • 2 tablespoons chili powder
  • 2 tablespoons freshly ground black pepper
  • 1 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • ¼ teaspoon ground cloves

Method:-

Just throw all the ingredients in a pot and mix together. Sprinkle the rub onto both sides of the ribs and cook indirectly for about 4 hours turning halfway.

The final step is to mop the ribs with a fruit glaze. I prefer plum but can use any other fruit that you fancy.

Ingredients:-

  • 225ml / 8 fl oz plum sauce
  • 3 tablespoons honey
  • 3 tablespoons orange juice
  • 3 tablespoons soy sauce
  • 3 tablespoons fresh lime juice
  • 1 teaspoons ground ginger
  • ½ teaspoon ground allspice
  • Salt and Pepper to taste

TIP - be careful with the salt because there’s a fair amount of salt in the soy sauce.

Method:-

Throw all the ingredients int a saucepan and heat gently for 10 minutes or until all the ingredients have dissolved

When the ribs are almost done coat the ribs with the glaze and cook for another 15 minutes. For extra flavour you can repeat the process.

TIP - To test if the ribs are cooked just pick on 2 adjacent ribs and gently try to tear apart. If cooked they should separate relatively easily.
