This oven baked barbecue chicken recipe with award winning bbq sauce is so easy to do but just remember that that first action and there’s no stopping you - pre-heat the oven to 200°C, 400°F or gas mark 6. And to clarify, the award was presented by my children - they love it!
TIP - If you can’t get hold of shallots for this recipe you can just use pickling onions or indeed large cut segments of a whole onion.
Ingredients:-
8 small chicken joints
Olive Oil
Freshly ground black pepper
12 shallots (optional)
For the BBQ Sauce
4 tablespoons white wine vinegar
5 tablespoons soy sauce
1 splash Tabasco sauce
2 tablespoons tomato purée
1 teaspoon mustard powder
1 clove garlic crushed
1 tablespoons brown muscovado sugar
Method:-
Rub joints with the oil and the pepper (salt isn't required because of the salt in the soy sauce). Place in a tray with the peeled shallots amongst the joints and roast for 25 minutes at 200°C, 400°F or gas mark 6
While the chicken is roasting, mix the bbq sauce. After the first 25 minutes take the chicken out of the oven and paste the bbq sauce all over. Roast the chicken for another 25 minutes basting every now and then.
