Barbecue belly pork is a good cut to roast if a high percentage of crackling to meat is what you're looking for. The quantity of belly pork is your choice, whether you need one or more joints, also check that the amount of fat to meat is acceptable.

Ask your butcher to score the skin, please read 'how to make great pork crackling' under 'Barbecue Tips' as you may want more incisions and deeper ones, don't forget to rub salt in.

The cooking time depends on the weight of meat, the coals need to be very hot initially, the best guide is when the crackling looks crackled, usually about an hour, making sure the pork is cooked through also. Get crack(l)ing!
