Plum Sauce Barbecue Pork Ribs Recipe

Ever heard of a barbecue pork ribs recipe with plum sauce?......Never?.....Yet plum sauce is the most amazing ingredient to add to a bbq sauce.

For this sauce recipe to work, your ribs should already be cooked and just ready to finish off. That means either smoked as in stage one of this barbecue back rib recipe or boiled as in this recipe for grilled barebcue ribs.

I first discovered plum sauce as a great accompaniment to aromatic crispy duck as opposed to your regular hoi sin sauce and ever since then I’ve tried it in a number of ways and here’s the best

The sauce will be sufficient for about 1.5kg (3.3lb) of ribs

Serves:- 4 people

Preparation Time:- 10 minutes
Cooking Time:- 20 minutes (in addition to the smoking of your ribs)

Total Time:- 30 minutes

Method:-

In a saucepan fry the onions and the garlic lightly in the oil for 3-4 minutes until the onion is translucent. Stir in the tomato purée and then follow with the remainder of the ingredients leaving the wine until last.

Leave the sauce to simmer gently for 5 minutes in order to boil off the bitterness of the alcohol and then leave to cool and you’re ready to go.

Take your already cooked ribs and place them on the grill, baste the barbecue sauce on your ribs and gently grill for 15 - 20 minutes. Remember all you're trying to do here is warm up the ribs and get the sauce to caremelize a little so gently does it.

TIP - When smoking or grilling ribs always cook them as one big rib rather than individual ribs because they stay more succulent and they’re also easier to turn on the barbecue.
