This is one of those versatile barbecue sauce recipes that you can either use as a BBQ sauce or a marinade. It is ideal for the grill or meat smoker, essentially a marinade that can be used to flavour pork and paste on during the cooking process.
In addition to the sweet and sour taste of bbq sauce that we love further complexity is added with a good dose of chili and paprika. On top of that there's a citrus element as well.
The other important point to make about this barbecue sauce is that it works great for both the direct
BBQ grill
or the
meat smoker,
and at the same time for both a pork joint or ribs so versatile in every sense of the word.
Throw all the ingredients into a mixing bowl except for the olive oil and the wine vinegar and mix together thoroughly. Now stir in the olive oil to make a paste and finally add the white wine vinegar tablespoon by tablespoon.
To use this sauce as a marinade, cover your pork joint or ribs in the paste, cover and leave to marinate for 5 or 6 hours in the refrigerator.
Halfway through the cooking process, I like to re-apply the paste then sit back and relax with a cold beer!
When the cooking is completed, take your meat out of the smoker and inhale deeply. Smells great doesn't it?

TIP - Put this paste in an airtight container and it’ll keep for weeks if refrigerated.
