It can just as easily go in the barbecue sauce recipes section or the marinades so I guess you're gonna have to choose. Its ideal for the grill or meat smoker, essentially a marinade that can be used to flavour pork and paste on during the cooking process.

The other important point to make about this barbecue sauce is that it works great for both the direct BBQ grill or the meat smoker, and at the same time for both a pork joint or ribs.

Ingredients:-

  • 450g or 1 lb Muscovado sugar
  • 50g or 2 oz salt
  • 50g or 2 oz paprika
  • 50g or 2 oz celery salt
  • 2 Tablespoons freshly ground black pepper
  • 1 or 2 Tablespoon hot chilli powder (depending on your taste)
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic salt
  • Zest of one lemon
  • 100ml or 4 fl oz olive oil
  • 3 Tablespoons white wine vinegar

Method:-

Throw all the ingredients except for the olive oil and the wine vinegar in a bowl and mix together thoroughly. Now add the olive oil and finally add the white wine vinegar tablespoon by tablespoon.

Cover your pork joint or ribs in the paste and leave to marinate for 5 or 6 hours. Halfway through the cooking process, re-apply the paste then sit back and enjoy!

TIP - Put this paste in an airtight container and it’ll keep for weeks if refrigerated.
