Barbecue Spare Ribs Recipes
Barbecue spare ribs recipes for your delight and delectation. The essential TIP for a great ribs – cook as one whole rack. Don’t be tempted to buy individual ribs, you’ll be forever turning them and they dry out.
Start with the rack of ribs and you’ll be amazed at the difference, they’re so much more succulent. The other basic thing to do when preparing ribs is to remove the membrane from the bone side of the rack. This piece of connective tissue doesn't get broken down during the cooking process and frankly isn't great to chew on. Taking this membrane out will help you get the tenderness that you want and also help your sauce or rub penetrate the meat and add the flavor that you want too.
You can grill barbecue ribs and circumstances might dictate that you go this way but ideally ribs need indirect cooking and work on about 60 minutes per pound weight.
I've got two Chinese style barbecue sauces / mops for you here so all you've got to do is decide which one to go for, make it up and baste at regular intervals (say every hour) throughout the cooking process. You don't want to do it any more regiular than this otherwise you will be forever opening up the lid on your 'que and letting all the heat out.

My Chinese Barbecue Sauce Recipe
Just throw all the ingredients below into a pan and heat up, simmer for 20 minutes and you’re there.
Ingredients:-
6 tablespoons hoisin sauce
2 tablespoons rice vinegar (white wine vinegar OK too)
1 tablespoon Thai fish sauce
1 tablespoon dark soy sauce
3 tablespoon honey
4 tablespoons finely chopped shallot
2 garlic cloves, crushed
1 tablespoon fresh ginger crushed
1/8 teaspoon Chinese five-spice powder
Remember, this BBQ sauce is high in honey and therefore will burn easily. Make sure you've got good temperature control.
Sweet and Sour Style Barbecue Sauce Recipe
Take a saucepan and:-
2 tablespoons groundnut oil
1 onion, finely chopped
2 cloves garlic, finely chopped
Fry the garlic and onion lightly for 3-4 minutes until the onion is translucent. Then throw in the rest of the ingredients, tomato purée first to prevent lumps:-
1 x 440g cans chopped tomatoes
4 tablespoons brown sugar
4 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 tablespoons light soy sauce
1 tablespoon tomato purée (paste)
2 teaspoons Chinese five spice powder
Bring to the boil and simmer for approx 30 minutes until the sauce is nice and thick.
