BBQ Meat

It's so important for me these days to buy my BBQ meat from a quality source to ensure that I get all the goodness and flavor available. The other important thing to consider particularly with red meat and game is to ensure that the meat has been well hung. Hanging meat is what gives it flavor.

Well Hung Beef

Of the three main sources (supermarket, butcher, farm direct) it's only the supermarket that I steer clear of because I can guarantee that the meat hasn't been hung long enough and the exact source of the meat will not be clearly stated.

Many will argue that the meat is cheaper in a supermarket (and pound for pound it is) but because it hasn't been hung, it contains more moisture and therefore is heavier. Of course during the cooking process this moisture is driven off and the meat shrinks so effectively you're left with the same amount of meat as a cut which has been hung, but only half the flavor. At the point of purchase it may seem more expensive but when it's on the table there's no argument.

Considering poultry, I've seen chicken farms where the birds are reared so intensively their legs are too weak to support the weight of body........AND THIS IS LEGAL! All in the name of cheap meat. The idea of killing animals for meat is not a pleasant one for many people but for me it really does make a difference if the animal had a happy quality life before slaughter. So when it comes to poultry, the minimum standard in my mind is free range.

Many farmers are now selling direct through farmers markets and generally the quality is excellent. Provided a good farmer is associated with a good butcher, the animal will have led a happy life and the meat will be well hung. So when it comes to my next cookout, that's my sort of BBQ meat.
