Grilled BBQ Trout Recipes With Fennel Oil Or Garlic

Grilled BBQ trout recipes are so easy to prepare and just a slight variation in seasoning can have a dramatic effect. The first secret to great barbecue trout is fresh fish and after that it's just about grilling over hot coals.

Cooking BBQ trout takes about 10 – 15 minutes depending on the size of the fish and the only thing you really have to worry about is ensuring that the fish doesn't break up. Your best bet is to use a fish basket or teflon mat that has been brushed with cooking oil as this makes flipping easy.

Check out the piccie below and you'll see that neither a basket of mat was used (this shot was taken on a campground in France of a cookout happening on my neighbor's pitch) and disaster was only just overted! For more on how to grill fish, check out my 3 fish grilling tips.

Fennel goes very well with trout so for the first recipe we're going to do a simple grilled trout and drizzle over some homemade fennel oil.

Ingredients:-

Method:-

Crush the fennel seeds in a pestle and mortar just enough to release the aroma and add to the olive oil. Chop the chillies and again add to the oil (remember to wash your hands afterwards!).

This is the easiest way to grill fish

The longer the oil stands, the more the flavors take hold so don’t use it straight away.

Make a couple of incisins with a knife diagonally down each side of the trout to help it cook more evenly. Rub in a little of the fennel oil (not too much otherwise it will cause a flare up) and season with salt and pepper.

Grill for the requisite 10 - 15 minutes flipping once and when you're trout is cooked (you'll know because the eyes turn a milky white color) serve with a simple red tomato salad and drizzle over some more fennel oil.

Trout with Garlic

Ingredients:-

All you need is

  • a couple of garlic cloves
  • olive oil
  • a lemon
  • and the trout of course

Method:-

Crush the garlic cloves and mix in a teaspoon of extra virgin olive oil and allow this to stand and infuse for 30 minutes.

When ready to cook, make some diagonal incisions in each side of the trout and rub in the garlic oil, season with a sprinkle of salt and pepper and stuff a wedge of lemon in the cavity.

Grill, smell the aroma and savor the flavor. Again it's great healthy barbecue recipe so serve with a green salad for the perfect lunch-time treat.
