Best Set Up For A Water Bath

by Dave
(NEPA)

Just starting to use my Char Griller and I was reviewing your site and yes I'm new to the slow, long cooking.

What is the best set up for a water bath?

I'm going to be using a Char Griller 3030.

Thank You

Dave

Answer:-

It's always great to welcome a new BBQ'er to the fold and I hope that you get the most out of my site.

The water bath is primarly there to help keep your food moist during the cooking process by creating a humid environment in the food chamber.

Where you site your water bath depends on the layout of your smoker but the fundmental point is that it should be somewhere between the heat source and the food.

You need the heat source to gradually warm up the bath to the point where the water starts to gently vaporize.

One thing to be careful of though is that your water bath will act as a thermal store. This will mean that it will take more time to get your smoker up to temperature when you set off but it should also provide better thermal stability through your cookout compared with not using a water bath.

One way to accelerate the process of warming the water is to use a kettle. If you do take this approach (and it's perfectly acceptable to do so) just remember to place your empty water bath in the smoker and take the kettle to the bath - walking around with a bath of hot water that could easily slop over and scold you is asking for trouble.
