Electric Or Charcoal Smoker

Is it just a matter of preference whether to use either an electric or charcoal smoker? I get better results with electric smokers than I do charcoal.

Answer

Yes it is. The flavour of the smoke comes largely from the wood chips so the actually source of the smoke is not that relevant.

Purists might disagree but you’ve got to balance your enthusiasm for smoked food with the convenience of cooking. If you’re a real nutcase like me then you probably will mess around with charcoal or even just wood because it’s all part of the fun.

But if you’re reading this thinking “what fun?” then it’s time to use an electric smoker. It’s a lot less messy and easily controllable in terms of temperature and therefore time of cooking.
