I like Eastern North Carolina BBQ the BEST! No matter if comes from Moore's BBQ Restaurant outside of New Bern, NC, Parker's from Greenville, NC or you can have Ralph's from Wheldon, NC. You can't beat it!
AND THEN, You have THE TOP OF THE LINE---White House BBQ from Lexington,NC.
But for Dry Rub Ribs---I have two places located in Memphis, TN. One is called Charlie Vergos "Rendezous" in a dark alley way in Downtown Memphis, TN---where the KING of Rock 'n Roll would get his ribs from and also the Beatles once ate there as well as, the Rolling Stones just to name a few bands. Then there is Jim Neeley's Famous Ribs and BBQ Resturant. His son, Pat and his wife have a show on the Foodnetwork named "Down Home with the Neeleys" and they show you how they do BBQ.
I learned how do to the "Q" the way my Great Grandfather on my mothers side of the family from New Bern, NC. Where every Summertime we have Whole Pig Roasts cooking all day in a homemade pit. You want to talk about some good eating. YUM!
This is the ideal dinner for my family and I. It goes like this: Get a whole pig, slap on the mop sauce and baste it for hours and then pull it apart to make a sandwich or dinner with Carolina Slaw---Hushpuppies---Sweet Iced Tea or PEPSI and then ad more of the sauce to your fixins' and there you have it. Good Old Fashioned Pulled Pork Bar-Be-Que from down home---Eastern Carolina Style!
