Grilled Barbecue Ribs Recipe

Many folks ask whether it's possible to do grilled barbecue ribs because the general rule of thumb with ribs is low and slow. I've done a couple of grilled recipes but this one is different in that the ribs are boiled before they are grilled so the grilling isn't really to cook the ribs, it's just there to add a bit of "char" and flavor.

Timing wise, you'll need about 2 hours to make the preparations before the grilling so make sure that you leave yourself plenty of time.

So if there's a 2 hour cooking time why go to all this trouble when you could smoke your ribs and arguably get a much more tender result? For me it's simple, this is a great recipe for when a smoker isn't available.

You can boil the ribs in advance and then finish them off over the camp fire. Maybe you're tailgating or on the beach with a small disposable charcoal barbecue grill - it's at these times that you need a grilled barbecue ribs recipe. Yes, it's never going to be exactly like the results you get from cooking low and slow, just agree it's different, it certainly doesn't make it any less tasty.

Ingredients:-

  • 3 pints water
  • 1 medium onion, peeled and thickly sliced
  • 3 cloves garlic, peeled and crushed
  • ½ teaspoon whole black peppercorns
  • 4 whole cloves
  • 1 dried chili
  • 2 x 1¼ pound racks of pork spareribs

For the barbecue glaze:

Method:-

Pour the water into a large saucepan and bring to the boil. Add the onion, garlic, cloves, peppercorn and chili and simmer for about 15 – 20 minutes.

Now add the ribs and continue to simmer for an hour ensuring that the ribs are at all times covered in water and once the hour is up, remove the ribs and allow to cool.

Pour out ½ pint of the stock from the saucepan and boil vigorously to reduce the volume by half then add the ingredients for the BBQ glaze. Stir everything and when thoroughly the mixed, the glaze is ready.

Now all you have to do is warm the ribs on the grill and brush with the glaze for five or ten minutes each side over medium coals and the jobs done.
