How do you barbeque a 15 pound prime rib on a small pellet barbeque?

I have a small Traeger pellet barbeque and I'd like to cook a large prime rib roast. The instructions with the barbeque said to use a smaller roast. I can cut it, but I'd rather do it in one big chunk.

My barbeque gets hotter on the ends where the air is moving, and stays cooler in the middle. I sure don't want to ruin an expensive prime rib.

Any suggestions?

This is where you hit the great part about barbeque - learning the art. I don't think that anyone will be able to give you perfect advice because it really does depend on your equipment.

Just go low and slow and keep you're eye on the internal meat temperature using a temperature probe.

It will take time so be patient but my concern is that you won't get the center cooked.

Just remember that if it doesn't work out, chalk it up to experience, carve out some steaks and get your grill out. That smokey flavor won't be wasted!
