How much charcoal do you use for ribs.

I’m using a Brinkman Gourmet Smoker and 7 lbs. of back ribs. How much charcoal should I use?

Answer:-



I haven’t had the good fortune to cook using a Brinkman Gourmet Smoker so it’s difficult for me to comment specifically about your smoker.

The points that I make below are common to all charcoal smokers.

Firstly, my own experience of smoking is to suck it and see. Provided you have the smoker running efficiently at the right temperature ie. you are controlling the air vents well then your charcoal should last a long time. Remember also that any charcoal left over can be recycled and used again so in theory you can put in as much as you want. All you have to do when your cookout is finished is to close the vents top and bottom and your fire will die due to lack of oxygen.

Having said that you can add as much charcoal as you like there are a couple of caveats to this theory:-

  1. If you put too much charcoal in then the air flow won’t be as easily controlled so you will have to keep an eye on the temperature as you go through the cookout.
  2. Don’t go daft! Take a pragmatic approach to how big the firebox is and don’t overload it.


It’s not an exact science and I always err on the side of more rather than less but at the end of the day, you may need a few cracks at it before your get it perfect.

One thing I always do (so I remember for next time) is document my findings starting with how much charcoal I added, what was I cooking, ambient temperature, prevailing wind etc. Just keep a note book handy and you'll be amazed how useful it quickly becomes.
