Recipes specify cook times, but internal food temperature is king. Grill or smoker temperatures are important too. So monitor the grill/smoker temperature too.

It's vital when you consider burgers or anything made from ground meat where surface bacteria can breed.
Just because the inside of your burger looks brown in color, it doesn't mean that your burger is cooked. Internal temperature is unequivocal.
Temperatures that you are looking for are:-
* Steaks & Roasts - 145°F
* Fish - 145°F
* Pork - 160°F
* Ham – 170°F (unless reheating in which case 140°F)
* Ground Beef - 160°F
* Egg Dishes - 160°F
* Chicken Breasts - 165°F
* Chicken Thighs and Wings - 180°F
* Whole Poultry - 165°F
* Duck & Goose - 180°F
In order to properly measure internal food temperature you need to buy a barbecue thermometer.
