How To Marinate Roast Beef Barbecue Style

“For tender results" it’s essential to marinate roast beef barbecue guru’s will tell you and they’re absolutely right. BBQ marinades are especially useful when using the less tender cuts of meat, take a look at my chuck steak recipes for good examples of this.

A marinade not only tenderises the meat however, it’s also an opportunity to impart flavour and this recipe’s really about flavour.

The definition of a marinade is something that is acidic and in this recipe below the acid comes from the alcohol in the Guinness. The addition of sugar also helps to tenderize the meat. Note also that there is no added salt because salt only serves to toughen the meat, the salt element is provided by the soy sauce.

Ingredients:-

  • 4 rump steaks (175g each)
  • 2 crushed garlic cloves
  • 120ml or 4fl oz Guinness
  • 2 tablespoons Muscovado Sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoons extra virgin olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon crushed black peppercorns

Method:-

Mix up all the ingredients in a glass or earthenware shallow dish and place the steaks in the marinade. Marinate overnight and drink the rest of the can of Guinness!

When your barbecue is good and hot slap the steaks on and use any remaining marinade to baste making the most of the peppercorns.

If you’re like me and go for a rare steak, a couple of minutes either side and Bob’s your uncle. If however your prefer medium to well then you might want to double that.
