Olive Wood Chips

In the early 1990s I bought a few bags of olive wood chips from a Pier 1 store in Seattle. I would love to use them again, but have not been able to find them. I believe the ones I purchased were imported from Israel.

Answer:-

Olive wood has a great flavor and works really well for both smoking and grilling. It's so common in Italy that it's hard not to use it! My Beef Fiorentina recipe is a classic example of where olive wood can be put to good use whan grilling a steak.
