I have been cooking for over 10 years at various high end restaurants. One being a steak house. I figured you and others may see this as a good tip to cooking steaks.
Very easy to do and universal no matter what grill you are using...
Step 1: You need to familiarize yourself with the steak by 'feeling' it. You do this by touching it with your DOMINATE hand like you suggest on your page
how to grill steaks. Do this a couple of times.
Step 2: Shake your other hand with your fingers to the ground and nothing in it a few times.
Step 3: On the same hand (assuming it is your left because you are right hand dominate), touch your thumb with your fore finger. Important: Just bring them together. Do not put pressure on the touching at all. Now tap (just like you did with the steak), the muscle under your thumb. Compare that with the steak. This is Rare. Using your middle finger to your thumb is Medium Rare. Your ring finger to your thumb is Medium. Your pinky finger is Medium Well.
Hopefully this makes sense. Once you compare your steak to your 'hand' you will be bang on. It is important to do this on both sides.
