Storing marinated raw meat

by Sabu John
(Dubai,UAE)

When preparing chicken bar-b-q for marinating 8 to 24 hours, I should keep it in the refrigerator.

My question is in which part of the refrigerator, inside the freezer or cooked food keeping area (down side of the freezer area).

Answer:-

It's really important to store meat safely so thanks for your question.

Store any meat that you are marinating in clean containers covered with stretch wrap on the bottom shelf of the refrigerator. Always store raw meat at the bottom so it can't touch or drip onto other foods.

Note that if you are marinating for an hour or less then it would be acceptable to keep the meat at room temperature. In fact I always recommend that the final hour prior to cooking is out of the refrigerator to allow the meat to warm up becuase this facilitates more even cooking.

Don't store it in the freezer because you will loose texture and the frozen marinade will not be able to work its magic.

Marinades work by the flow of fluid and if you have frozen the marinade then no movement can take place.
