Tender BBQ Ribs

I don't understand why my ribs were not tender after 5/6 hours in the smoker?

I utilized a recipe from your web site. Used the rub and let the ribs marinate overnight. Used a mesquite/hickory mix for flavoring in the smoker cooked the ribs for 5/6 hours and yet my ribs were tough. Again I also utilized a spray mixture of lemon and olive oil as well as the pan with the water to add flavor from the soaked chips. I'm baffled yet when I utilize my gas grill I get tender BBQ ribs.

What makes for tender BBQ ribs is the low cooking temperature. This breaks down all the muscle fibers and then the meat falls off the bone.

If you're using an identical recipe that's fine on the gas grill but tough on the charcoal grill then it points to your temperature control. Keep it as close to 225°F / 110°C as you can and you should get really tender ribs.
