Keeping the fire going

Another option is to put a stack of unlit coals under the lit coals when you start cooking. The lit coals on top will slowly ignite the unlit coals underneath and you can keep a steady fire going much longer this way. Of course you should be using a chimney starter to kick things off in the first place - just pour the lit coals onto the unlit coals. Best of luck!
