Tending Charcoal Fires

Help for tending charcoal fires:-

I just bought a 250 gallon smoker grill. I am using charcoal on the bottom of the cooker to cook and wood in the firebox. I am trying to get a grip on the vents, but how do I keep the temp at around 250 or so when the coal starts to die out after 6 or 7 hours and there is more cooking to do? Thanks.

Answer:-

When the coals die, the heat will die and this is one of the labours of love for the charcoal smoker enthusiast. Depending on your smoker, eventually the coals will need recharging and I find that the best way to do this is to replace the old coals with new ones that are already a glow.

To do this you will need to invest in a charcoal chimney burner and this will allow you to keep the fire constant and there so the temperature.
