I have an old Kamado smoker and I want to smoke a turkey for Thanksgiving. My daughter-in-law is going to brine the bird thinking that it will then be more moist. It will be about 13lb. I plan to sprinkle wood chips on the charcoal. Are there any special things that I should know and how long will it take to adequately smoke a turkey this size?

A kamado smoked turkey is exactly what I'll be doing this Thanksgiving so you're a man after my own heart.

This year I'll be experimenting with some rubs under the skin so come back soon and you'll be able to see how I got on.
For a 13lb bird you may want to do it another hour longer than I did but to be sure you can either prick it with a skewer and check for clear running juice or use a Digital Probe Thermometer
and check for 165°F.
This year I'm also going to be more relaxed about it. Set the kamado off early and so long as 5 hours have passed I'll sit back and relax with a few drinks. Whenever my family want to eat after that is fine by me!
