Vinegar Free BBQ Sauce

I want to make a barbeque sauce have no vinegar, Have you any ideas how to make a vinegar free BBQ sauce?

Vinegar gives a pretty distinctive sour taste to BBQ sauce which beautifully complements the sweetness of the sugar. The sourness is characteristic of an acid so the best is to replace with another edible acid and the only one I know is citric acid found in oranges and lemons.

It may make your sauce taste a little "fruity" but you make mask that with the addition of some spices.

This is a recipe below that I've been recommended. I have to say that I haven't tried it so I can't tell you what consistency the sauce will be (you might need to thicken it up a bit) but the taste is pretty fine.

Note that it uses tomato paste rather than ketchup, that's because there's so much sugar in ketchup you'd need to add an awful lot more lemon juice to balance the sauce and the flavor would be too "lemony".

It may be better to work with passata which is less viscous than tomato paste and eliminate the ½ cup of water.

The only allergen in this recipe is mustard.

Yield:- 3 cups or 750ml

Preparation Time:- 10 minutes
Total Time:- 10 minutes

Ingredients:-


  • 2 cups tomato paste
  • ½ cup lemon juice
  • ½ cup water
  • 1 teaspoon oregano
  • ½ teaspoon English powdered mustard
  • ¼ teaspoon cumin
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder


Method:-


Just mix everything up and there you have it....vinegar free BBQ sauce.

Thank you so much for this recipe! I'm allergic to vinegar, and every other recipe I've found that says it's vinegar-free has ketchup as the base. Ketchup is not vinegar-free! I have recently developed a vinegar allergy, and finding sauce recipes has been very difficult. Nearly every recipe that claims to be vinegar-free has an ingredient that contains vinegar (ketchup, mustard, mayo, worcestershire sauce, etc.). I can't wait to try this one!!!

Check your mustard for Vinegar!

The first three ingredients in mustard are: Vinegar, Water, Mustard Seed. This is not a vinegar free recipe.

Thanks for your comment and you're right to say "check". The recipe calls for Mustard powder rather than mustard from a jar that has been ready mixed.
The ingredients of mustard powder are (usually):-
  • Mustard

  • Flour


Provided you use powdered mustard, this recipe is vinegar free.
