Vinegar Free BBQ Sauce
I want to make a barbeque sauce have no vinegar, Have you any ideas how to make a vinegar free BBQ sauce?

Vinegar gives a pretty distinctive sour taste to BBQ sauce which beautifully complements the sweetness of the sugar. The sourness is characteristic of an acid so the best is to replace with another edible acid and the only one I know is citric acid found in oranges and lemons.
It may make your sauce taste a little "fruity" but you make mask that with the addition of some spices.
This is a recipe below that I've been recommended. I have to say that I haven't tried it so I can't tell you what consistency the sauce will be (you might need to thicken it up a bit) but the taste is pretty fine.
Note that it uses tomato paste rather than ketchup, that's because there's so much sugar in ketchup you'd need to add an awful lot more lemon juice to balance the sauce and the flavor would be too "lemony".
I hope that you have enough tomato paste in the house!
- 2 cups tomato paste
- ½ cup lemon juice
- ½ cup water
- 1 teaspoon oregano
- ½ teaspoon English powdered mustard
- ¼ teaspoon cumin
- ¼ teaspoon pepper
- ¼ teaspoon garlic powder
Just mix everything up and there you have it....vinegar free BBQ sauce.
