Weber Kettle Temperature

I looked at your turkey smoking recipe and everything seems clear except the temp. You say smoke the turkey over medium coals. I wouldn't know medium coals if they bit me on the leg. So, can you give me a temperature range for smoking the turkey? I'll be using a Weber Performer.

Thanks for pointing out that I have missed off the temperature - I'll rectify it immediately.

Whatever I'm smoking I work on about 225°F as the ideal temperature. To ensure that you get it absolutely right use a temperature probe and refer to my guide for safe cooked meat temperatures.

As you know, I used a kamado but there's no reason why the recipe shouldn't work just as well on your Weber Performer.
