why does the skin of my chicken feel rubbery?

Why does the skin of my chicken feel rubbery?

I use an electric smoker and add hickory chunks. I also marinate the chicken sometimes. I've tried different marinades but the skin still feels and tastes rubbery. The smoker also has a bowl for water. The meat itself tastes great.

I cook it about 4 hr. Any ideals? thanks.

Answer:-

When it comes to chicken, you can get some great flavours in the smoker and it looks like you've got this part of the process down to a fine art. Congratulations!

When it comes to why the skin tastes rubbery, it's simply down to the fact that you are slow cooking.

Check out this post for more information.

Putting it bluntly, if you want the succulent great flavours that come with smoking, just accept that the skin will never be crisp.

If you want crispy skin - get your grill out.
