Memphis Style Ribs

I need the recipe for MEMPHIS STYLE RIBS that I got at a restaurant in Downtown Memphis,TN (everytime I went see GRACELAND ELVIS PRESLEY'S Home).

It was called Charles Vergos' Rendezvous Restaurant. It was the best I ever had and would like to make it. It was a Dry Rub with a Vinegar Mop Sauce. I want to use it for Ribs and Chicken on the Smoker.

Answer:-

Firstly, here's the Rendezvous Seasoning Rub:
  • 1/2 cup salt
  • 1/4 cup pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon oregano
  • 1 tablespoon celery seed
  • 1 tablespoon paprika
  • 1 tablespoon chili powder


Mix the ingredients in a bowl and set aside for use in the sauce:

  • 4 cups white distilled vinegar
  • 4 cups water
  • 1/3 cup Rendezvous Famous Seasoning Rub
  • 2 slabs pork loin back ribs (approximately 2 pounds each)


Method:-
Make your basting sauce by mixing the above ingredients together.

Cook meat over direct heat on the grill, approximately 18-inches above your fire. Your coals should be at 325-350°F

Start cooking with the ribs bone side down and continue until the bone side is golden brown. Baste a couple of times with basting sauce and then flip your slab of ribs to cook meat side down until this side turns golden also.

Each side should take approx 30 minutes to get the golden brown that you're looking for and when done, baste again and sprinkle with Rendezvous World Famous Seasoning and you're ready to serve.
