Please can you help me learn how to bake bread in a Big Green Egg?
I have purchased a Big Green Egg, and I would like to cook bread, scones and sweets without them being smoked. Can you help me?
All you have to do is use the plate setter accessory to ensure that you are cooking indirectly and make sure that your firebox is thoroughly cleaned out, no old charcoal or residual wood chips.
Use fresh charcoal and get your Egg up to baking temperature (whatever your recipe requires) and you'll be well away.
I tend to fire my Egg up to maximum temperature for 30 minutes before doing bread (especially if I've done something low and slow previously) as this helps clear away any smoky tar and debris. Just open up top and bottom vents to the full and let it "blow off steam".
I bake a lot of unleavened bread in my Egg and if you follow the preparation above you'll get a nice clean burn and no smoky taste.
Also, it doesn't affect the taste, but using that pizza stone does make the baking process that much more effective too.
