Baked Beans Recipe

by John Roemer
(Dallas, TX)

This baked beans recipe is for my masterpiece Barbequed Skillet Beans. If I do say so myself they're excellent when smoked with mesquite wood chips, and served with brisket or smoked chicken wings.

They're real quick and easy to do because the base is a can of beans.

I've designed the recipe to be done in a grill with a lid so if you're grill doesn't have a lid, you'll have to retire to the oven.

Ingredients:-

  • 2 (16 oz.) cans of Ranch Style beans (I like one to be Jalapeno), drained
  • 2 tsp. Liquid Smoke (Mesquite)
  • ¾ cup, quality bottled BBQ sauce
  • 1 oz. golden raisins
  • ½ cup, brown sugar
  • 1 tart apple (Granny Smith) peeled, cored, and chopped
  • 1 medium onion, chopped
  • 3 strips uncooked bacon, cut in half (or substitute 2T. butter)

Method:-

With the lid down, preheat your grill or (if you must!) oven to 350 degrees Fahrenheit.

Mix all ingredients except bacon in cast-iron skillet. Top with uncooked bacon and then bake uncovered for 1 hour.

Paul's comment:-

Nice recipe! I was interested to see that you didn't pre-cook the onion or the apple. I followed your recipe to the letter and it was mighty fine........congratulations!
