I want to know how long to cook a 20 pound roast of beef on bbq rotisserie.
I want to cook the roast on bbq and want it med well done to slice for buns. How long should I cook it.
Answer:-
20 pounds! That's one heck of a piece of meat. That said, when rotisserie cooking, the weight of the meat is less important, it's more about the thickness i.e. the distance from the outside of the meat to the center (where the spit skewer is).
Given the point above it's going to make your first attempt a little trial and error. I like mine rare so I would normally do it for about 60 minutes against a high heat. (My general rule is 60 mins for rare, 90 mins for medium and 2 hrs + for well done).
To add a bit more science to it you can use a
bbq thermometer and check for an
internal meat temperature of:-
145°F (62.6°C) for rare
160°F (71.1°C) for medium
170°F (76.7°C) for well done
Remember that the spit rod will get hot and heat will therefore radiate from the inside out so test the meat temperature near the rod but not directly touching the rod.
Or you can use the texture test:
Gently squeeze the beef and if it’s soft and takes time to recover its form (like the flesh at the base of your thumb) then it’s rare. If your beef is firm and doesn’t form an imprint when you press it, then it’s well done.
Medium (a similar feel to the flesh in the palm of your hand) and all points in between are a matter of experience so on your first cook, feel the beef regularly to learn.
